My Story

Flapjacks have been the 4th member of our house for 15 years. There are constant discussions and much internet research into flavour pairings and ideas. There are scribbled notes on a pad of paper by the bedside with ideas that have come to me when I should be asleep! There are scraps of paper stuffed into books, make-shift recipe books and loads of notes made on iPhones over the years.

But where did it all start?

I started baking as a child with my mother at the kitchen table creating cakes and desserts for my father’s business clients who were always invited to dine at our family home. As I grew older, I started baking my own cakes and bakes at the same table along with my young daughter and feeding family, friends and work colleagues. There were parties with tables bulging with desserts and cakes and I was always the one that was approached for birthday cakes.

In 2015 we ventured into selling at local markets and were surprised by the amount of people who bought our flapjacks on a regular basis, some turning up with deep plastic boxes to fill. At the time, the high street was full of pale miserable-looking flapjacks, that all looked the same and were made with margarine and padded out with fillers such as flour and eggs. They were either rock hard or fell apart so I set out on a mission to improve their look and flavour, enhancing those that you could find in any bakers’ shop on any high street, with good quality ingredients and unique flavours.

In 2018 I took on a job as a Chef at Wynyard Hall making the cakes and traybakes for sale at their farm shop and have continued along that path for the last 6 years working for different businesses along the way whilst still baking for the family business after work.

As a family we knew we had the wherewithal to make our northern flapjacks into a success story, but family commitments prevented developing the business in the way we wanted. Now, as time has marched forwards and I have got wiser, rather than slowing down, it appears I am going forwards at full pelt into another dimension – a Limited Company and a new name.
